Tonights Dinner

Just wanted to post of pituce of tonights dinner. Nothing real fancy. Porkloin cooked with jalapenos, green bell, orange bell, yellow bell, red bell, and some New Mexico green chiles. That with some fresh corn on the cob and some mashed potatoes(no, not the box kind). It turned out really really good!

If you love peppers as much as you say, you should try this. I see some corn on the cob on your plate. I've become addicted to making Jamaican Pepper Corn. It is generally for older corn that may be losing a little of it's flavor, but I do it anyway. Cut the corn into 1-2 inch little bites, throw them in pot and cover with water. Add a couple Tbsp's of butter, some garlic cloves, a couple of habaneros, little salt and pepper. Let it simmer for about 1/2 hour. I like to put them into the fridge and eat them as snack's through-out the week. The sweet, peppery flavor is incredible.
